Following the same ideas we achieved with the Verdejo, this is another demonstration of the range of characteristics a single grape variety can offer.

There are two grape harvests several days apart – enough for this delicate variety to show different characteristics which are important in seeking a natural balance.
After fermentation, the wine rests on its lees for two or three months and is bottled in a single batch.

We are seeking elegant fruit and hints of citrus, with natural acidity and freshness.
